2/28/2025 Relaxing Fearless No Buy Friday: Time For Planning Your Garden! Grow Spaghetti Squash! Recipe For Spaghetti Squash Pie Shared Today!
Today, my husband and I are relaxing at home. Tomorrow is March and a great day to plan our organic garden by seeing what seeds we have. It is a misnomer to think you can’t use seeds from past years and actually that is the definition of a seed. My grandfather had a farm and it was amazing how he grew things in a small garden. He was forced to allow other acreage to be used for commercial farming of corn and soybeans and constantly told the grandchildren to stay away from the commercial part because of the chemical spraying that went on. He was a strong believer in not using chemicals. He would be shocked by what persons eat today.
Our society expects perfect vegetables and fruits and most may not be aware of the process and the amount of waste of the imperfect fruits and vegetables. If a vegetable he picked had some issue like overripe- he literally threw that overripe tomato to the “resting” part of his garden. He knew to plant different vegetables together and not to plant the same ones, year after year in the same place. Now back to the overripe tomato he threw into the “resting garden”- the follow spring new tomato plants has come up and we transplanted so they had room to grow.
Another thing he did is to not throw away the roots of plants and use to grow some other plants like cabbage! I do this as well by putting the bottom of a cabbage on top of the frig in some water and yes it grows!
Now, I am saving the best for last! As a child, my grandfather did try unusual seeds annually. One was spaghetti squash. Spaghetti squash can be used for casseroles and even desserts! If you go to an organic store you will find spaghetti squash for often $5 or more for each! Spaghetti squash is so easy to grow. I had some perfect ones growing in the backyard and someone picked them and took them! In addition, squash like this can be kept in a cool area so you have food over the winter. As a society we have become reliant on grocery stores that supply perfect and chemically laden fruits and veggies. I invite you to look up cancer and disease rates and I think you will find rates rising in areas of commercial farming.
Here is an idea that we actually did. We replaced ornamental bushes in the front yard with five dwarf blueberries bushes. These produce quarts of blueberries every spring and no pesticides required. In addition, I beg you to not use lawn service that uses chemicals on your lawn or weed killers, but I digress. A topic for another day.
Spaghetti Squash Pie
Mock Coconut Pie (Spaghetti Squash Pie)

Not too many people would know this spaghetti squash pie is not actually made with coconut. I wasn't sure what to do with a bumper crop of spaghetti squash and this quickly became an annual answer to a now non-issue!
Ingredients
Original recipe (1X) yields 8 servings
1 cup white sugar
3 large eggs
¼ cup butter, melted
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
3 cups cooked, shredded spaghetti squash
1 (9 inch) pie shell, baked
1 pinch ground nutmeg (Optional)
1 pinch ground cinnamon (Optional)
1 ½ cups whipped cream for garnish (Optional)
Directions
Preheat the oven to 350 degrees F (175 degrees C).
Beat sugar and eggs together in a mixing bowl until light and frothy. Beat in butter, lemon juice, and vanilla until well blended. Stir in spaghetti squash.
Pour the mixture into prebaked pie shell. Dust the top with nutmeg and cinnamon.
Bake the pie in the preheated oven until a knife inserted in the center comes out clean, 40 to 45 minutes. Cool on a rack before serving.
Garnish with whipped cream.
